Revert "coq: default version is the one of coqPackages"

This reverts commit 5f04a61d.

That way, the Coq that is used to build other coq packages
can be overridden.

The top-level `coq` attribute is `coqPackages.coq` thus both
“un-versioned” attributes are consistent.
