linux: set CONFIG_DRM_VMWGFX_FBCON y

Fixes https://github.com/NixOS/nixpkgs/issues/58070, and brings NixOS
into line with Ubuntu/Fedora/Arch/etc.

Tested that all kernels in Nixpkgs that build before this change build
after it.
